  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1/4 cup sugar-free sweetener erythritol or monk fruit
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened almond milk
  • 1/4 cup sugar-free dark chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together Greek yogurt, eggs, vanilla extract, and almond milk until smooth.
  3. In a separate bowl, sift together cocoa powder, almond flour, sugar-free sweetener, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients, stirring until well combined.
  5. If using, gently fold in sugar-free dark chocolate chips.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted in center comes out with a few moist crumbs.
  8. Allow the brownies to cool completely before slicing into squares.
