Ingredients
  

  • 1 lb ground turkey
  • 1 can diced tomatoes 15 oz
  • 1 can kidney beans 15 oz, rinsed
  • 1 medium onion chopped
  • 1 red bell pepper chopped
  • 2 tbsp chili powder
  • 2 cloves garlic minced
  • 1 tsp cumin
  • salt and pepper to taste
  • 2 tsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions and bell peppers until soft, about 5 minutes.
  2. Increase heat slightly and add ground turkey, cooking until browned and no longer pink, approximately 8 minutes.
  3. Stir in minced garlic, chili powder, cumin, salt, and pepper. Cook for another minute to enhance flavors.
  4. Add diced tomatoes with juices and rinsed kidney beans; mix thoroughly and bring to a simmer.
  5. Reduce heat to low, cover the pot, and let simmer for at least 30 minutes to meld flavors.
  6. Serve hot in bowls; garnish with shredded cheese or fresh herbs if desired.

Notes

Use fresh spices for maximum flavor impact. Always taste as you go and adjust seasonings. Let chili sit for at least 30 minutes after cooking for flavors to marry. Can substitute ground turkey with beef if preferred. Add jalapeños or cayenne pepper for extra heat.
