Low-Carb Bacon Cheeseburger Casserole

Ingredients
  

  • 1 lb ground beef 85% lean recommended
  • 6 slices bacon diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 6 large eggs
  • 0.5 cup heavy cream
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 2 cups shredded cheddar cheese divided
  • Salt and black pepper to taste
  • Chopped green onions optional garnish
  • Diced tomatoes optional garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Cook diced bacon in a large skillet until crisp. Remove with a slotted spoon, leaving grease behind.
  3. Add onion and garlic to skillet and cook 2–3 minutes until translucent and fragrant.
  4. Add ground beef, cook until browned, then drain excess grease. Stir in bacon and let cool slightly.
  5. In a mixing bowl, whisk eggs, cream, mustard, Worcestershire, salt, and pepper until smooth.
  6. Spread beef mixture in baking dish, top with 1 cup cheese, pour egg mixture, then add remaining cheese.
  7. Bake 25–30 minutes until center is set and top is golden. Rest 5 minutes before slicing.

Notes

Pro tip: Drain beef well and let mixture cool slightly before adding egg custard to avoid scrambling.
