Ingredients

  • 2 cups Monterey Jack cheese shredded fresh
  • 16 ounces ground beef 80/20 blend preferred
  • 1/2 medium onion sliced thin
  • 1 bell pepper sliced into strips
  • 1 tsp Worcestershire sauce
  • 4 ounces cream cheese room temperature
  • Salt and pepper to taste

Equipment

  • Non-stick skillet
  • Baking sheet
  • Parchment paper
  • Spatula
  • Meat thermometer

Method

  1. Preheat oven to 350°F and line a baking sheet with parchment paper. Heat a large skillet over medium-high heat and add ground beef, breaking it apart as it browns.
  2. Add sliced onions and bell peppers to the skillet with beef. Cook for 5-7 minutes until beef reaches 160°F internal temperature and vegetables are softened. Drain excess grease.
  3. Return skillet to medium heat. Add Worcestershire sauce, salt, pepper, and room temperature cream cheese. Stir continuously until cream cheese is completely melted. Remove from heat.
  4. Create 8 cheese circles on parchment-lined baking sheet using 1/4 cup cheese per circle, leaving 2 inches between circles. Bake 8-10 minutes until edges are golden brown with lace-like appearance.
  5. Remove from oven and cool for exactly 1 minute. Place 2 tablespoons beef mixture on each cheese circle and carefully roll into logs. Cool 2-3 minutes to set shape.

Notes

Work quickly when assembling - timing is crucial for workable cheese that doesn't crack. Ground beef should reach 160°F for food safety. Store in refrigerator up to 3 days or freeze up to 3 months.
