Ingredients

  • 1 whole egg
  • 1 egg yolk
  • 1.5 cups whole milk
  • 3 tablespoons sugar
  • 3 tablespoons vegetable oil
  • 3 cups all-purpose flour
  • 0.75 teaspoon salt
  • 4 teaspoons baking powder 1 tablespoon plus 1 teaspoon
  • 6 oz pepperoni chopped, thin slices preferred
  • 2 cups shredded cheese 50% Mozzarella, 50% Provolone
  • 1 teaspoon oregano or Italian seasoning
  • 2 tablespoons butter optional, for brushing
  • 1 teaspoon garlic paste or 1/4 teaspoon garlic powder, optional

Equipment

  • Large mixing bowls
  • Loaf pan
  • Whisk
  • Wire cooling rack

Method

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, beat the whole egg and egg yolk together. Add the milk, sugar, and vegetable oil. Mix well until combined.
  3. In another bowl, whisk together the flour, salt, black pepper, and baking powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don't overmix.
  5. Fold in the chopped pepperoni, shredded cheese, oregano (or Italian seasoning), and garlic (if using). Mix until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, smoothing the top. If desired, melt the butter and brush it on top for extra flavor and golden finish.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve warm for the best experience!
