- Preheat oven to 425°F. Place an empty baking sheet inside to heat up for crispy crust.
- In a small bowl, combine honey, hot sauce, and red pepper flakes. Microwave for 15-20 seconds until warm, stir well, then set aside to cool for 5 minutes.
- If using fresh flatbreads, pre-bake for 2-3 minutes. Remove and let cool for 1 minute.
- Spread pizza sauce evenly over flatbreads, leaving a ½-inch border. Use about 2-3 tablespoons per flatbread.
- Add shredded mozzarella in an even layer, then arrange pepperoni slices on top. Place extra cheese pieces over pepperoni to prevent curling.
- Add optional jalapeños and black olives if using. Place jalapeños under some cheese to prevent burning.
- Carefully remove hot baking sheet from oven and place assembled pizzas on it. Return to oven and bake for 8-10 minutes until edges are golden-brown and cheese is bubbly.
- Remove from oven and immediately drizzle with prepared hot honey mixture. Let rest 2 minutes before slicing.
Notes
Pre-bake flatbread for 2-3 minutes before adding toppings to prevent soggy crust. Don't drizzle hot honey before baking as it can burn. Use lowest oven rack for crispiest results.
