Ingredients

  • 2 lbs lean beef (sirloin or round) cut into bite-sized cubes
  • 4 cloves garlic minced
  • 4 tablespoons unsalted butter cut into pats
  • 1/4 cup low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • fresh parsley for garnish, optional

Equipment

  • Slow cooker
  • Sharp knife
  • Cutting board

Method

  1. Trim any visible fat from the beef and cut into uniform 1-inch cubes. Season generously with salt, pepper, and half the thyme, tossing to coat evenly.
  2. Layer half the seasoned beef cubes in the bottom of your slow cooker. Scatter half the minced garlic over the beef, then dot with half the butter pieces. Repeat with remaining beef, garlic, and butter.
  3. Combine beef broth, Worcestershire sauce, and soy sauce in a small bowl, then drizzle evenly over the layered ingredients. Sprinkle with remaining thyme.
  4. Cook on LOW for 6-8 hours or HIGH for 3-4 hours. Check for tenderness around the 6-hour mark - the beef should easily fall apart when tested with a fork.
  5. Garnish with fresh chopped parsley and serve immediately while hot.

Notes

Use lean beef cuts to prevent excessive grease. Cut beef into uniform pieces for even cooking. Don't lift the lid too often during cooking. Store leftovers in refrigerator for 3-4 days or freeze for up to 3 months.
