Ingredients
  

  • 1 cup rotisserie chicken chopped into small chunks
  • 0.5 cup low-fat cottage cheese 2% milkfat
  • 0.25 cup jarred banana peppers mild or spicy, diced
  • 0.25 cup red onion diced
  • 0.25 cup celery diced
  • 2 tablespoons green onion thinly sliced
  • 0.5 teaspoon Dijon mustard or spicy mustard
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt and pepper to taste

Method
 

  1. In a food processor, pulse cottage cheese, mustard, garlic powder, salt and pepper until smooth and creamy.
  2. In a large mixing bowl, combine the blended cottage cheese mixture with chopped chicken, banana peppers, red onion, celery and green onion.
  3. Stir until all ingredients are well combined and evenly coated with the cottage cheese mixture.
  4. Taste and adjust seasonings if needed. Serve immediately or store in refrigerator until ready to serve.

Notes

Store in refrigerator for up to 3 days in an airtight container. Serve over lettuce, in pita pockets, or with crackers. Each serving provides approximately 25+ grams of protein.
