Ingredients
  

  • 1 lb lean ground beef 93% preferred
  • 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
  • 1 large avocado sliced just before serving
  • 1 cup cottage cheese low-fat or full-fat
  • 1 yellow onion diced
  • 2 tbsp olive oil divided
  • 1 packet taco seasoning or 2 tbsp homemade
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F. Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread in single layer on parchment-lined baking sheet and roast for 40-45 minutes, stirring once halfway through until fork-tender with caramelized edges.
  2. Heat remaining tablespoon olive oil in large skillet over medium-high heat. Add diced onion and cook for 5-6 minutes until softened and translucent, stirring occasionally.
  3. Add ground beef to skillet, breaking up with wooden spoon into bite-sized pieces. Cook 6-8 minutes until no pink remains and internal temperature reaches 160°F. Drain excess fat, stir in taco seasoning and cook 2 minutes more until fragrant.
  4. Assemble bowls by layering warm roasted sweet potatoes, seasoned ground beef, sliced avocado, and cottage cheese. Drizzle with hot honey to taste and serve immediately for best temperature contrast.

Notes

Store components separately for up to 4 days. Blend cottage cheese beforehand for creamier texture. Adjust hot honey amount to control heat level. Internal beef temperature should reach 160°F for food safety.
