Ingredients
  

  • 4 fillets cod fillets 6 oz each
  • 0.25 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger grated
  • 2 cloves garlic minced
  • 1 tablespoon sesame oil
  • 2 stalks green onions thinly sliced for garnish
  • 1 tablespoon sesame seeds for garnish
  • 2 tablespoons fresh cilantro chopped for garnish
  • 4 wedges lime wedges for serving

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until well combined.
  3. Place the cod fillets on the prepared baking sheet. Brush the soy ginger glaze evenly over each fillet, making sure they are well coated.
  4. Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
  5. Remove from the oven and transfer the cod fillets to serving plates.
  6. Garnish with thinly sliced green onions, sesame seeds, and fresh cilantro.
  7. Serve immediately with lime wedges on the side for an extra burst of flavor.

Notes

For enhanced flavor, marinate the cod in the glaze for 30 minutes to 1 hour before cooking. Choose fresh cod that is firm and has a mild smell. Light soy sauce is recommended as it has a milder flavor.
