- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until well combined.
- Place the cod fillets on the prepared baking sheet. Brush the soy ginger glaze evenly over each fillet, making sure they are well coated.
- Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
- Remove from the oven and transfer the cod fillets to serving plates.
- Garnish with thinly sliced green onions, sesame seeds, and fresh cilantro.
- Serve immediately with lime wedges on the side for an extra burst of flavor.
Notes
For enhanced flavor, marinate the cod in the glaze for 30 minutes to 1 hour before cooking. Choose fresh cod that is firm and has a mild smell. Light soy sauce is recommended as it has a milder flavor.
