  • 1.5 pounds beef stew meat cut into bite-sized pieces
  • 1 pound baby potatoes halved
  • 4 tablespoons unsalted butter melted
  • 3 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper
  • 0.25 cup beef broth
  • 1 tablespoon olive oil for searing

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Season beef pieces with salt and pepper, then sear until browned on all sides, about 6-8 minutes total.
  2. While beef sears, halve baby potatoes and place them in your slow cooker. In a small bowl, whisk together melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
  3. Transfer seared beef to the slow cooker with potatoes. Pour garlic butter sauce over everything, ensuring even coverage. Add beef broth and gently stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours. Let rest 10 minutes before serving.

Notes

Choose well-marbled cuts like chuck roast for best results. Don't skip searing the beef as it locks in juices and adds incredible flavor. Store leftovers in refrigerator for up to 4 days.
