- Heat olive oil in a large skillet over medium-high heat. Season beef pieces with salt and pepper, then sear until browned on all sides, about 6-8 minutes total.
- While beef sears, halve baby potatoes and place them in your slow cooker. In a small bowl, whisk together melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
- Transfer seared beef to the slow cooker with potatoes. Pour garlic butter sauce over everything, ensuring even coverage. Add beef broth and gently stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours. Let rest 10 minutes before serving.
Notes
Choose well-marbled cuts like chuck roast for best results. Don't skip searing the beef as it locks in juices and adds incredible flavor. Store leftovers in refrigerator for up to 4 days.
