Ingredients
  

  • 3 large eggs
  • 0.5 cup Greek yogurt
  • 1 ripe banana
  • 0.75 cup quick oats
  • 1 scoop vanilla protein powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt

  • Waffle iron (mini or regular)
  • Wire rack

Method
 

  1. Add all ingredients to a blender and blend until a smooth batter forms.
  2. Let the batter sit for 2-3 minutes to thicken slightly for fluffier waffles.
  3. Heat and grease your waffle iron according to manufacturer instructions.
  4. Pour batter into heated waffle iron and cook according to your waffle iron instructions until golden brown.
  5. Place cooked waffles on a wire rack while preparing remaining waffles to maintain crispiness.
  6. Serve immediately with fresh fruit and maple syrup, or store for later use.

Notes

The batter will thicken as it sits, which helps create fluffier waffles. You can use dairy-free or whey-based protein powder. Store in fridge for 4 days or freeze for up to 2 months. Great with fresh berries, almond butter, peanut butter and banana, or chocolate chips.
