Method
- Remove meat from rotisserie chicken and discard the skin and bones. Dice meat small and place in a large mixing bowl.
- Add celery, green onions, apple, almonds, Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper to the mixing bowl.
- Mix well until thoroughly combined. Taste and adjust seasonings, mayonnaise, or yogurt as desired.
- Serve immediately if desired. For best results, refrigerate for at least two hours before serving.
Notes
Keep in refrigerator for 3-4 days in an airtight container. For meal prep, add apple pieces just before serving to prevent browning. Serve on sandwiches, over greens, or with crackers.
