Ingredients
  

  • 1 whole rotisserie chicken meat removed and diced
  • 2 stalks celery thinly sliced
  • 4 whole green onions thinly sliced
  • 1 medium apple with skin on, diced small
  • 0.33 cup slivered almonds or sliced almonds
  • 0.33 cup plain Greek yogurt or more as desired
  • 0.33 cup mayonnaise or more as desired
  • 0.5 medium lemon juiced
  • 2 tablespoons Dijon mustard
  • salt and pepper to taste

Method
 

  1. Remove meat from rotisserie chicken and discard the skin and bones. Dice meat small and place in a large mixing bowl.
  2. Add celery, green onions, apple, almonds, Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper to the mixing bowl.
  3. Mix well until thoroughly combined. Taste and adjust seasonings, mayonnaise, or yogurt as desired.
  4. Serve immediately if desired. For best results, refrigerate for at least two hours before serving.

Notes

Keep in refrigerator for 3-4 days in an airtight container. For meal prep, add apple pieces just before serving to prevent browning. Serve on sandwiches, over greens, or with crackers.
