Easy Protein Waffles

Ingredients
  

  • 0.33 cup protein powder 32g, any flavor
  • 0.25 cup flour 35g, all-purpose
  • 1 teaspoon baking powder
  • 0.125 teaspoon salt
  • 0.5 cup water
  • 0.25 cup egg whites or additional water
  • 0.25 cup Greek yogurt or applesauce
  • 2 tablespoons sweetener of choice
  • 2 teaspoons oil optional for crispy waffles

Equipment

  • Waffle iron
  • Large mixing bowl
  • Whisk
  • Measuring cups

Method
 

  1. Whisk dry ingredients well in a large mixing bowl.
  2. Stir in wet ingredients to form a batter.
  3. Depending on the type of protein powder, you may need to add more liquid a tablespoon at a time to achieve a pancake or waffle batter texture.
  4. Preheat waffle iron according to instructions for your specific waffle maker.
  5. Once hot, grease very well with nonstick cooking spray.
  6. Pour batter into the center of the iron.
  7. Close, and cook according to manufacturer's directions until the waffle is light and crispy.
  8. Re-grease the iron between waffles to prevent sticking.

Notes

Recipe works well with spelt flour, white flour, or gluten-free flour. If using liquid sweetener like maple syrup, decrease water by 2 tablespoons. Can substitute peanut butter for half the yogurt for peanut butter version.
