Ingredients
  

  • 12 lasagna noodles
  • 1 pound ground beef 85% lean preferred
  • 1 jar marinara sauce 24 oz
  • 2 cups cottage cheese small curd preferred
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste

  • 9x13 inch baking dish
  • Large skillet
  • Medium mixing bowl

Method
 

  1. Preheat oven to 375°F and cook lasagna noodles according to package directions, undercooking by about 1 minute.
  2. Brown ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it up as it cooks. Drain excess fat.
  3. Mix cottage cheese, egg, Parmesan cheese, garlic powder, basil, oregano, salt, and pepper in a bowl. Let sit for 5 minutes.
  4. Layer in baking dish: spread ½ cup marinara on bottom, add 4 noodles overlapping, spread half cottage cheese mixture, add half beef, drizzle with ⅓ remaining sauce, sprinkle with ⅓ mozzarella.
  5. Repeat layers once more, then finish with remaining noodles, sauce, and mozzarella on top.
  6. Bake for 30 minutes until cheese is golden and bubbly. Let rest for 10 minutes before serving.

Notes

Use small curd cottage cheese for best texture. Undercook noodles slightly as they finish cooking in the oven. Can be assembled up to 24 hours ahead.
