Ingredients
  

  • 1 cup mixed nuts almonds, cashews, pecans
  • 1 cup dark chocolate chips 70% cocoa
  • 1/2 cup honey or maple syrup
  • 1/2 teaspoon sea salt plus extra for topping
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 2 tablespoons coconut oil

  • Microwave-safe bowl
  • Large mixing bowl

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy removal.
  2. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together in 30-second intervals until smooth and creamy. Stir well to avoid burning.
  3. In a large mixing bowl, combine mixed nuts, rolled oats, honey or maple syrup, vanilla extract, and half of the melted chocolate. Mix thoroughly until all ingredients are well coated.
  4. Press the mixture firmly into the prepared pan using a spatula. Drizzle with remaining melted chocolate for a gorgeous finish.
  5. Bake for 15-20 minutes until golden brown. Remove from oven and sprinkle with sea salt while still warm.
  6. Allow to cool completely in the pan before using parchment paper overhang to lift out. Cut into squares or bars as desired.

Notes

Use high-quality dark chocolate (at least 70% cocoa) for rich flavor. Toast nuts before adding to enhance their flavor. Let bars cool completely before cutting to avoid crumbling.
