Ingredients

  • 1 cup cottage cheese small curds preferred, drained
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon dried rosemary or thyme
  • salt and pepper to taste
  • olive oil spray for greasing

Equipment

  • Baking sheet
  • Parchment paper
  • Mixing bowl
  • Tablespoon for scooping
  • Fine mesh strainer

Method

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly spray the parchment with olive oil.
  2. Drain the cottage cheese thoroughly using a fine mesh strainer, pressing gently to remove excess moisture.
  3. In a mixing bowl, combine the drained cottage cheese with garlic powder, onion powder, dried herbs, salt, and pepper. Mix until evenly combined.
  4. Using a tablespoon, scoop portions of the mixture onto the prepared baking sheet, leaving about 2 inches between each scoop.
  5. Bake for 15-20 minutes, watching carefully during the final few minutes. The chips should be golden brown and firm to the touch.
  6. Allow the chips to cool completely on the baking sheet for maximum crispiness.

Notes

Store in airtight container at room temperature for up to 3 days. Best consumed fresh for optimal crispiness. Can be refreshed in 350°F oven for 2-3 minutes if needed.
