Method
- Cook chicken as you normally would. Boiling in a large pot for 20 minutes works well. Use two forks to shred the chicken and place it into a large bowl.
- Add the cottage cheese, mayonnaise, sliced grapes, thinly sliced celery, sliced almonds, and dried cranberries to the bowl with the shredded chicken.
- Stir all ingredients until the chicken is completely coated and everything is well combined. Season with salt and pepper to taste.
- Serve immediately between two slices of bread for sandwiches, or eat as-is. Enjoy!
Notes
Store in refrigerator for up to 4 days. Add almonds just before serving if meal prepping to maintain crunch. Great served on bread, in lettuce wraps, or over greens as a salad.
