Ingredients
  

  • 2 chicken breasts
  • 16 oz whole milk cottage cheese 1 lb container
  • 3 tablespoons mayonnaise
  • 1 cup red grapes sliced
  • 0.5 cup celery thinly sliced
  • 3 tablespoons sliced almonds
  • 2 tablespoons dried cranberries
  • salt and pepper to taste
  • 8 slices bread for serving

  • Two forks
  • Large mixing bowl
  • Measuring cups

Method
 

  1. Cook chicken as you normally would. Boiling in a large pot for 20 minutes works well. Use two forks to shred the chicken and place it into a large bowl.
  2. Add the cottage cheese, mayonnaise, sliced grapes, thinly sliced celery, sliced almonds, and dried cranberries to the bowl with the shredded chicken.
  3. Stir all ingredients until the chicken is completely coated and everything is well combined. Season with salt and pepper to taste.
  4. Serve immediately between two slices of bread for sandwiches, or eat as-is. Enjoy!

Notes

Store in refrigerator for up to 4 days. Add almonds just before serving if meal prepping to maintain crunch. Great served on bread, in lettuce wraps, or over greens as a salad.
