Ingredients
  

  • 1 heaping tablespoon peanut butter sugar-free
  • 1 large egg
  • 2 teaspoons cocoa powder
  • 2 teaspoons monk fruit sweetener optional
  • 1 pinch salt
  • 1.5 tablespoons sugar-free semi-sweet chocolate chips divided
  • 1-2 teaspoons water as needed

Equipment

  • Mini waffle maker
  • Small mixing bowl

Method
 

  1. Preheat your mini waffle maker according to manufacturer's directions.
  2. Combine the creamy peanut butter, egg, cocoa powder, pinch of salt, sweetener, and 1 tablespoon of semi-sweet chocolate chips in a small mixing bowl.
  3. If needed, add 1-2 teaspoons of water to thin the mixture. The batter should be easy to stir but not runny.
  4. Place half of the mixture into the waffle iron and top with half of the remaining chocolate chips.
  5. Cook for 2-3 minutes until there is no steam emitting from the machine.
  6. Remove the waffle and repeat with the remaining batter and chocolate chips.

Notes

Use sugar-free peanut butter for keto version. If peanut butter is very thick, add water to thin batter. Can substitute sugar for monk fruit if not following keto diet. Recipe makes 2 small waffles or 1 large waffle depending on waffle maker size.
