- In a large mixing bowl, combine rolled oats, almond flour, and protein powder. Stir until evenly mixed.
- In a separate bowl, beat together cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until smooth.
- Gently fold in the blueberries, being careful not to crush them.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until it forms a dough.
- Scoop out tablespoon-sized portions and roll them into balls.
- Place bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the fridge for up to 1 week or freeze for longer shelf life.
Notes
Use vanilla protein powder for best flavor results. Softened cream cheese mixes easier - take out 30 minutes before using. Don't overmix when adding blueberries to prevent crushing. Fresh or frozen blueberries work equally well.
