Ingredients
  

  • 0.5 cup rolled oats
  • 1 cup almond flour
  • 2 scoops vanilla protein powder
  • 0.25 cup cream cheese softened
  • 0.25 cup Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 0.5 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Method
 

  1. In a large mixing bowl, combine rolled oats, almond flour, and protein powder. Stir until evenly mixed.
  2. In a separate bowl, beat together cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until smooth.
  3. Gently fold in the blueberries, being careful not to crush them.
  4. Gradually incorporate the dry ingredients into the wet mixture, stirring until it forms a dough.
  5. Scoop out tablespoon-sized portions and roll them into balls.
  6. Place bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to 1 week or freeze for longer shelf life.

Notes

Use vanilla protein powder for best flavor results. Softened cream cheese mixes easier - take out 30 minutes before using. Don't overmix when adding blueberries to prevent crushing. Fresh or frozen blueberries work equally well.
