Ingredients
  

  • 1 cup unsalted butter melted
  • 1 cup granulated sugar for crust
  • 2 cups all-purpose flour
  • 2 large eggs
  • 2 cups fresh blackberries
  • 1 cup pistachios chopped

  • 2 mixing bowls

Method
 

  1. Preheat oven to 350°F (175°C). Grease 9x13 inch baking dish lightly with cooking spray or butter.
  2. In mixing bowl, combine melted butter, sugar, and flour. Mix until crumbly texture forms. Press mixture evenly into bottom of prepared baking dish.
  3. In another bowl, whisk together eggs and sugar until light and fluffy. Gently fold in fresh blackberries and chopped pistachios. Be careful not to overmix to avoid breaking blackberries.
  4. Pour blackberry filling over prepared crust in even layer. Bake for 25-30 minutes or until set and edges are slightly golden.
  5. Remove from oven and allow to cool completely in pan on wire rack. Refrigerate for at least 1 hour before cutting into squares.

Notes

Use fresh blackberries for best flavor. Cool completely before cutting for cleanest slices. Store covered at room temperature for 3 days or refrigerated for 1 week.
