- Preheat oven to 350°F (175°C). Grease 9x13 inch baking dish lightly with cooking spray or butter.
- In mixing bowl, combine melted butter, sugar, and flour. Mix until crumbly texture forms. Press mixture evenly into bottom of prepared baking dish.
- In another bowl, whisk together eggs and sugar until light and fluffy. Gently fold in fresh blackberries and chopped pistachios. Be careful not to overmix to avoid breaking blackberries.
- Pour blackberry filling over prepared crust in even layer. Bake for 25-30 minutes or until set and edges are slightly golden.
- Remove from oven and allow to cool completely in pan on wire rack. Refrigerate for at least 1 hour before cutting into squares.
Notes
Use fresh blackberries for best flavor. Cool completely before cutting for cleanest slices. Store covered at room temperature for 3 days or refrigerated for 1 week.
