- Preheat oven to 400°F and spray 9x5 inch loaf pan with nonstick cooking spray.
- In large bowl, whisk together Greek yogurt, both sugars, applesauce, eggs, and vanilla until smooth.
- In medium bowl, combine flour, baking soda, and salt.
- Gently fold dry ingredients into wet ingredients until just combined.
- Add mashed bananas and fold in gently. Do not overmix.
- Pour into prepared pan. Bake 10 minutes at 400°F, then reduce to 350°F and bake 45-50 minutes until toothpick comes out clean.
Notes
Use overripe bananas for best flavor. Don't overmix batter to prevent dense texture. Bread will be very dark on top when done.
