Air Fryer Protein Bagels

Ingredients
  

  • 1 cup all-purpose flour can substitute whole wheat or gluten-free flour
  • 2 teaspoons baking powder
  • 1 pinch salt optional
  • 1 cup cottage cheese plus 2 tablespoons, 2% or 4%
  • 1 large egg optional for egg wash
  • 1 tablespoon everything seasoning or preferred toppings

  • Medium mixing bowl
  • Kitchen scale (optional)
  • Pastry brush

Method
 

  1. Add flour, baking powder, and pinch of salt to a medium bowl and mix well.
  2. Make a well in center of flour mixture and add cottage cheese. Mix with fork or rubber spatula until chunky dough forms.
  3. Turn dough onto well-floured surface and knead with hands for 1-2 minutes until semi-smooth ball forms. Add flour if sticky.
  4. Divide dough into 4 equal sections. Roll each into 6-7 inch log about ¾ inch thick, then connect ends to form bagel shape.
  5. Whisk egg with splash of water in small bowl. Brush egg wash lightly over each bagel and add toppings if desired.
  6. Preheat air fryer to 300°F. Spray or line basket with parchment paper.
  7. Place bagels in even layer in air fryer basket. Cook for 15-17 minutes until golden brown, checking at 10 minutes.
  8. Remove from air fryer and cool for at least 15 minutes before slicing and serving.

Notes

Oven method: Bake at 375°F for 20-25 minutes. Store in airtight container for 5 days or freeze for 3 months. 15-minute cooling time is essential for proper texture.
