Air Fryer Blueberry Cottage Cheese Toast

Ingredients
  

  • 4 slices whole-grain bread thick-cut preferred
  • 1 cup cottage cheese full-fat works best
  • 1/2 cup fresh blueberries patted dry
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon lemon zest from about 1/2 lemon

  • Spreading knife or spoon

Method
 

  1. Preheat your air fryer to 350°F (175°C).
  2. Spread a generous 1/4 cup cottage cheese on each bread slice, leaving a small border around edges to prevent overflow.
  3. Distribute fresh blueberries evenly across each slice, gently pressing them into the cottage cheese so they won't roll off during cooking.
  4. Drizzle honey over each toast and sprinkle with lemon zest.
  5. Place toasts in air fryer basket without overlapping. Cook for 5-7 minutes until edges are golden brown and cottage cheese is slightly set.
  6. Remove carefully and serve immediately while the edges are still crispy and cottage cheese is warm.

Notes

Best served immediately for optimal texture. Can prepare ingredients ahead of time but assemble just before cooking. Check at 5 minutes to prevent over-browning.
