  • 1 cup cottage cheese preferably full-fat
  • 2 large eggs
  • 0.25 teaspoon garlic powder optional
  • 0.25 teaspoon Italian herbs optional
  • 2 tablespoons shredded cheese optional

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking tray with parchment paper or silicone mat.
  2. Blend cottage cheese and eggs until completely smooth using a blender or food processor.
  3. Add optional spices or shredded cheese, if using, and blend briefly to combine.
  4. Pour batter onto prepared tray and spread evenly to 1/4-inch thickness using a spatula.
  5. Bake for 20-25 minutes, or until golden brown and firm to the touch.
  6. Let cool slightly before slicing or serving to prevent breaking.

Notes

Use full-fat cottage cheese for best texture. Ensure mixture is completely smooth for even baking. Don't skip parchment paper to prevent sticking. Can be stored at room temperature for 1-2 days or refrigerated for up to 3 days.
