Ingredients
  

  • 1 can black beans (15-ounce) rinsed and drained
  • 1 large ripe avocado
  • 1/2 cup frozen or canned corn thawed or drained
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon chili powder
  • salt and black pepper to taste
  • 4 large flour tortillas (10-inch)

  • Medium-sized mixing bowl
  • Fork
  • Spatula or large spoon
  • Dry skillet (optional)

Method
 

  1. In a medium mixing bowl, mash the avocado with a fork until it reaches your desired consistency. Add the lime juice and stir to combine.
  2. Add the black beans, corn, red onion, and cilantro to the mashed avocado. Sprinkle with cumin, chili powder, salt, and pepper.
  3. Gently fold all ingredients together with a spatula, being careful not to overmix or mash the beans too much. Taste and adjust seasonings.
  4. Warm tortillas in a dry skillet for 15-20 seconds per side, or microwave wrapped in damp paper towel for 30-45 seconds.
  5. Place one-quarter of filling in center of each tortilla. Fold top and bottom edges over filling, then roll tightly from one side to seal.

Notes

Rinsing black beans removes excess sodium. Choose ripe but not overly brown avocado. Don't overstuff tortillas to prevent tearing. Best served immediately while warm.
