- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Drop small mounds of cottage cheese (about 2 tablespoons each) onto the baking sheet, spacing them 2 inches apart for proper air circulation.
- Using the back of a spoon, flatten each mound as thin as possible - this is crucial for maximum crispiness.
- If using seasonings, sprinkle evenly over each flattened mound and press gently to adhere.
- Bake for 15-20 minutes, watching closely during the last 5 minutes, until edges are golden brown and centers look set.
- Let cool completely on the baking sheet for at least 5 minutes - they'll continue to crisp up as they cool.
Notes
Use full-fat cottage cheese for best flavor and texture. Chips are best enjoyed fresh but can be stored in airtight container for up to 3 days. Reheat briefly in 350°F oven to restore crispiness if needed.
